So for almost 2 weeks now I have been on a vegan diet. Am I considering going vegan…probably not but I did do it as a part of my 2018 new year cleanse/detox.
To be honest I was nervous at first. I eat pretty good and healthy overall but after ommiting all dairy, meats and added sugar I didn’t have many options left. So if you know me, you know I got creative.
I always put my own spin on recipes or create my own. This here is a spin on something I typically make – stewed lentils.
Lentils are a legume and have a lot of protein, which helped in the no meat area. But unlike regular beans, they don’t make you so gassy….big plus!!!
And I love curry – seafood, veggies etc. So why not curry some lentils? And I always add coconut milk to my curries (another love of mine).
So let me introduce you to my curried lentils with sweet potatoes added to make it more hearty.
2 cups dried lentils
1 medium sweet potato peeled and diced
4 cups of water
Half an onion diced
2 small to medium garlic cloves – diced
1 cup coconut milk (bits of coconut cream optional)
2-3 sprigs of fresh thyme
1/4 tsp dried oregano
1 tbsp curry powder
1/4 tsp cumin
2 tbsp grapeseed or canola oil
Salt and pepper to taste
In a microwavable bowl add the rinsed lentils and 2 cups of water
Microwave on high for about 3 mins and set aside for 5 -10 mins to soak
After soaking lentils you are ready to begin your dish
Add oil and curry powder to a medium saucepan
Cook until curry begins to turn golden brown
Add herbs to oil and fry for about a minute
Add lentils and remaining water to pot
Add all seasonings, stir and cook covered about 7 mins
Add coconut milk and sweet potatoes to pot
Cook covered another 7-10 mins or until potatoes are tender
Taste and add extra coconut milk as desired
Serve and enjoy! (I served mine with a side of quinoa)
